Directions
In a skillet over medium heat, cook the ground beef with the diced onion, garlic powder, salt, and pepper until the beef is browned and the onions are translucent. Drain any excess grease.
Lay out the flour tortillas on a clean surface. Spread mustard and mayonnaise on one side of each tortilla.
Sprinkle half of each tortilla with both types of shredded cheese, then distribute the cooked ground beef evenly on top of the cheese. Add sliced pickles over the beef.
Fold the tortillas in half over the beef and cheese to create a half-moon shape.
Heat a teaspoon of olive oil or butter in a clean skillet over medium heat. Place one quesadilla in the skillet at a time, cooking for about 2-3 minutes on each side or until the outside is golden brown and the cheese is melted.
Repeat with remaining quesadillas. Slice each quesadilla into wedges for serving.
Variations & Tips
Feel free to switch up the cheeses for whatever you have on hand — think pepper jack for a bit of a kick, or mozzarella for a milder taste. Vegetarians in the house? Substitute the ground beef with cooked and seasoned black beans or even a plant-based meat alternative. And for an extra layer of flavor, toss some diced tomatoes or avocado slices into the quesadilla before grilling.
